100% grass fed beef, raised on pasture, dry aged for 14 days for maximum flavor and tenderness. Total cost for half beef (side) is $4.50 per pound plus tax based on hanging weight of the beef. $600 Deposit due at time of order.
HALF BEEF will be custom cut to your specifications at a local processor/butcher shop. Processor will depend on month of processing, either Eickmans processing in Seward, IL or Lake Geneva Country Meats in Lake Geneva, Wisconsin. Typical half beef hanging weight is approximately 280 - 320 lbs. and will net 170 - 230 lbs. of take home meat, including organ meats and bones if requested. Customer will be able to specify thickness of steaks, size or roasts, and portions that will go into ground. Customer responsible for processing costs (approximately $200 for half beef) in addition to the cost of the meat.
We usually take one trailer load of beeves into the processor every month of the year, so choose the month you want your beef processed. Typically the butcher will dry age the beef for two weeks after slaughter to maximize tenderness before cutting and packaging it for you. You can pickup your beef at the processor at no additional charge, OR have us pick it up for you and store at the farm for an additional fee of $35. Total estimated cost: 300 lbs. hanging weight x $4.50 lb = $1350 + $225 processing = $1575 for ~200 lbs of take home meat, or $7.88 per pound.
